New Chef Prepares for Big Day

The Millennium Stadium’s new executive chef, Malcolm Faulkner, will need to be as cool as a cucumber on Saturday – when up to two thousand hospitality customers head to Cardiff for Wales’ first home game of the 2010 RBS 6 Nations Championship.
The newly appointed chef took up his post at the Millennium Stadium last week after over a decade of serving up food to the visitors of the Madejski Stadium in Reading, home of London Irish and Reading Football Club.
Compass Group UK & Ireland, part of the world’s largest catering company, provides the catering at both stadia so Malcolm already feels right at home.
He is delighted with the new challenges that await him at Wales’ iconic venue and is looking forward to Saturday after what has already been a busy couple of weeks:
“I am very much looking forward to my first weekend in this awesome venue and I can’t wait for Saturday when up to 74,500 people fill the Stadium for Wales versus Scotland.
“Preparations are well underway to provide the best catering service to the two thousand covers that we are expecting. The food has been arriving all week for the menu options and the cooking will continue throughout the next couple of days in the kitchens.
“On Saturday, matchday will start very early in the morning for the kitchen staff when I deliver a briefing about the standards that I expect throughout the day.
“I am well equipped at dealing with pressure after over ten years at the Madejski and I am looking forward to getting into the VIP hospitality boxes to mix with the customers when the game kicks off this weekend.”
