
Kate Austen: Bringing Flavour to the Principality

This Friday, Renowned chef Kate Austen will showcase her culinary talents at the ‘Boot Room’. A premium hospitality experience from Principality Stadium where guests are invited to witness her skills firsthand through an exquisite dining experience.
One of Principality Stadium’s most prestigious hospitality packages, the ‘Boot Room’ offers an unforgettable and exclusive experience for guests on the eve of Wales vs England. Guests will enjoy behind-the-scenes access, a champagne reception and a delightful four-course meal, prepared by the talented Kate Austen.
We caught up with Kate Austen ahead of the event to find out more on what guests can expect…
Kate Austen, 31, is currently working as a private chef. Kate grew up in a family that had a passion for food. After university, she realised that office life wasn’t for her and becoming a chef was the obvious choice.
“My Mum was a great cook and it seemed like an obvious thing to pick something you’re passionate about to work in”
Kate’s culinary journey began at Morston Hall in Norfolk, where she stayed for two and a half years. She then moved to London to work for Marcus Wareing, travelled to Scandinavia and Sweden, working in Michelin-starred restaurants along the way, and returned to London to join Gordon Ramsay’s development team.
Last year, she made history as the first female winner of the main course on BBC’s Great British Menu.
It’s Kate’s first visit to Principality Stadium and she’s excited to witness Wales V England and to be bringing her 4-course dining room experience to the ‘Boot Room’ hospitality. Kate gave us a sneak peek into tonight’s menu.
“It’s going to be seasonal British ingredients done with a few twists, but good, hearty food”

Through her journey, Kate realised the importance of being sustainable. As a chef, she will always incorporate this into her work.
“I always try and use British produce. I think we need to eat way more seasonally and use British produce. We shouldn’t be flying things in from all over the world.”
Kate is thrilled to share her food with everyone in the Boot Room and is focused on showcasing her culinary style while creating something special.
“I have a sweet tooth with cooking, so that means I always have to balance it with quite a lot of acidity.
So, I think my food really hits those different notes of kind of great vinegars, lots of flavours, and using some things that are a bit foraged and unusual…
I think foods are like art and music, it moves”
